Enchilada Casserole

The following is an actual conversation with Scientists over at SitK Laboratories. We hope you enjoy the lovely banter. Best, -S.K.I.M.


M: “Objections to a vegetarian science? I got a recipe book from this seriously awesome veggie place in Mendocino.  Thinking of trying some of the more tasty things.”

(Note: We actually ended up not using the new book at all. Stay tuned for more veggie noms.)

S: “Cool with me.”

I: “Have you decided which one you’re going to cook?”

K: “I swear this has nothing to do with the veggies (Everyone knows K hates green things). Work related shenanigans are such that I will not be able to attend science tonight :( Folks have fun, now.”

S:In soviet russia, veggies eat you.  GLHF

K: “Chernobyl did *crazy* things to venus flytraps. Just saying.”

M: “Bring a head of broccoli to work with you.  Put it on your desk.  During lollery tonight, stare at it mournfully.  When someone inevitably asks what’s up, reply “I could be eating this.'”

S: “Bonus points if you order that head of broccoli using Amazon Fresh.”

Ingredients:
1 (15 ounce) can black beans, rinsed and drained
2 cloves garlic, minced
1 onion, chopped
1 (4 ounce) can diced green chile peppers
1 jalapeno pepper, seeded and minced
1 (8 ounce) package tempeh, crumbled
6 (6 inch) corn tortillas
1 (19 ounce) can enchilada sauce
1 (6 ounce) can sliced black olives
8 ounces shredded Cheddar cheese

Preparation:
1. Preheat oven to 350 degrees. Lightly oil a 9×13 inch baking dish.

2. In a medium bowl, combine the beans, garlic, onion, chile peppers, jalapeno pepper, and tempeh. Pour enchilada sauce into a shallow bowl.

3. Dip three tortillas in the enchilada sauce, and place them in the prepared baking dish. Be sure to cover the bottom of the dish as completely as possible. Place 1/2 of the bean mixture on top of the tortillas, and repeat. Drizzle the remaining sauce over the casserole, and sprinkle with olives and shredded cheese.

4. Cover, and bake for 30 minutes. Uncover, and continue baking for an additional 15 minutes, or until the casserole is bubbling and the cheese is melted.

Lab Results:

The enchilada was delish! We theorize that adding a layer of cheese between the tortillas and the next bean mixture would make it just a touch more mouth watering. However, further tests are needed.

Additional notes: K was hungry. Inconclusive evidence that the Broccoli on his desk was ever eaten.
