
An extra post this week! Ooooh de la li! And what greater way to start off your weekend right than rolling up your sleeves to make a delicious Cassava Cake! Don’t know what a Cassava Cake is? Me neither, but after a few rounds in the kitchen last Tuesday, making our first ever A.D.D. menu, I would like to convince you that it is as easy as opening a can with a can opener. Go ahead, follow the recipe below!
Ingredients:
1 package (2 cups) pre-grated yucca
2 eggs, beaten
1 (12 ounce) can evaporated milk
1 (14 ounce) can sweetened condensed milk
1 (14 ounce) can coconut milk
Preparation:
1. Preheat an oven to 350 degrees F (175 degrees C).
2. Stir the yucca, eggs, evaporated milk, sweetened condensed milk, and coconut milk together in a bowl until thoroughly combined; pour into a baking dish.
3. Bake in the preheated oven for 1 hour. Switch the oven’s broiler on and bake under the broiler until the top of the cake is browned, 2 to 3 minutes. Cool completely in refrigerator before serving.

Well we do not have any pictures of what it looks like after it comes out of the oven.
If that is not a telling sign of how delicious it is/was, I do not know what would be. But, do not take our word for it, try it out yourself. Do it for SCIENCE!
